The ‘pala romana baciata’ is a variant of the typical Roman ‘pala’ pizza. It is made up of two layers of highly hydrated dough stacked on top of each other and baked together, creating a texture that is crispy on the outside and soft on the inside. After the initial cooking, separate the two layers (which you will find already cut), top as desired and then bake again for a golden, crispy finish.
